Crispy Stuffed Mushrooms

Ingredients

  • 24 large mushrooms, stems removed and reserved
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup minced scallions
  • 2 cloves minced garlic
  • 3 tbsp. olive oil, divided
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F.
  2. Chop reserved mushroom stems finely and sauté with scallions and garlic in 2 tbsp. of olive oil over medium heat for 3-4 minutes, or until softened.
  3. In a large bowl, mix sautéed mushroom mixture with bread crumbs and Parmesan cheese. Season with salt and pepper to taste.
  4. Stuff each mushroom cap with the mixture and place on a baking sheet. Drizzle remaining olive oil over the mushrooms.
  5. Bake for 20-25 minutes, or until the mushrooms are tender and cooked through, and the stuffing is crispy and browned.
