Crispy Stuffed Mushrooms
Ingredients
- 24 large mushrooms, stems removed and reserved
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup minced scallions
- 2 cloves minced garlic
- 3 tbsp. olive oil, divided
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F.
- Chop reserved mushroom stems finely and sauté with scallions and garlic in 2 tbsp. of olive oil over medium heat for 3-4 minutes, or until softened.
- In a large bowl, mix sautéed mushroom mixture with bread crumbs and Parmesan cheese. Season with salt and pepper to taste.
- Stuff each mushroom cap with the mixture and place on a baking sheet. Drizzle remaining olive oil over the mushrooms.
- Bake for 20-25 minutes, or until the mushrooms are tender and cooked through, and the stuffing is crispy and browned.
