Crispy Tapioca Ice Cream and Apricot Compote Recipe
Ingredients
- 1/2 cup small pearl tapioca
- 2 cups whole milk
- 1/2 cup heavy cream
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup panko bread crumbs
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1 can apricot halves in syrup
- 1/4 cup honey
- 1/2 teaspoon ground cinnamon
Instructions
- Soak the tapioca pearls in water for 30 minutes. Drain.
- In a large saucepan, heat the milk, cream, sugar and salt over medium heat, stirring until sugar dissolves and mixture comes to a boil. Reduce the heat to low, add the tapioca and cook, stirring occasionally, until the tapioca is tender and mixture thickens, about 30-35 minutes. Remove from heat and stir in vanilla extract. Pour the mixture into a bowl and chill in the refrigerator for at least 2 hours.
- Preheat oven to 325F. Spread the panko bread crumbs on a baking sheet and bake, stirring occasionally, until browned, about 10-12 minutes. Remove from oven and let cool.
- In a medium bowl, mix together the melted butter, cinnamon, ginger and cooled panko bread crumbs. Spread the mixture onto a baking sheet and bake for another 5-7 minutes, or until golden brown and crispy. Remove from oven and let cool.
- Drain the apricot halves, reserving the syrup. In a small saucepan, heat the apricot syrup, honey and cinnamon over medium heat until the mixture thickens, stirring occasionally. Add the apricot halves and cook until heated through, about 2-3 minutes. Remove from heat.
- To assemble the dish, spoon the apricot compote into the bottom of individual serving dishes. Scoop the tapioca ice cream on top of the compote. Sprinkle the crispy panko mixture over the ice cream. Serve immediately.
