Crostini with Mussels and Cherry Tomatoes Recipe

Ingredients

  • 1 loaf of French baguette
  • 1 pound of mussels
  • 1/2 cup of cherry tomatoes, halved
  • 3 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1/4 cup of white wine
  • 1 lemon, juiced
  • 1/4 cup of fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F.
  2. Slice baguette into 1/2 inch slices, brush with olive oil and bake for 5-7 minutes, until toasty and lightly browned.
  3. Clean mussels by scrubbing with a brush and removing any beards. Rinse under cold water and set aside.
  4. Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  5. Add mussels to the pan and pour in white wine. Cover saucepan and cook for 5-7 minutes, until the mussels have opened.
  6. Remove any unopened mussels and transfer the rest to a bowl, leaving the mussel broth in the pan.

  8. Spoon the broth over the crostini and top each with a mussel and a spoonful of tomato mixture.
  9. Sprinkle with fresh parsley and serve immediately.
