Crunchy Easter Lollipops

Ingredients:

  • 1 cup light corn syrup
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1/4 teaspoon cream of tartar
  • 1/8 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • food coloring (optional)
  • Easter candy decorations

Instructions:

  1. In a medium-sized saucepan, combine the corn syrup, granulated sugar, water, cream of tartar and kosher salt.
  2. Cook over medium heat, stirring constantly, until the mixture reaches 300°F (hard crack stage) on a candy thermometer.
  3. Remove from heat and stir in the vanilla extract and food coloring, if using.
  4. Pour the mixture onto a parchment-lined baking sheet.
  5. While the candy is still hot, place the Easter candy decorations onto the surface of the candy.
  6. Allow the candy to cool and harden completely before breaking it into pieces and serving as lollipops.
