Crunchy Easter Lollipops
Ingredients:
- 1 cup light corn syrup
- 1/2 cup granulated sugar
- 1/4 cup water
- 1/4 teaspoon cream of tartar
- 1/8 teaspoon kosher salt
- 1 teaspoon vanilla extract
- food coloring (optional)
- Easter candy decorations
Instructions:
- In a medium-sized saucepan, combine the corn syrup, granulated sugar, water, cream of tartar and kosher salt.
- Cook over medium heat, stirring constantly, until the mixture reaches 300°F (hard crack stage) on a candy thermometer.
- Remove from heat and stir in the vanilla extract and food coloring, if using.
- Pour the mixture onto a parchment-lined baking sheet.
- While the candy is still hot, place the Easter candy decorations onto the surface of the candy.
- Allow the candy to cool and harden completely before breaking it into pieces and serving as lollipops.
