Crunchy Jerusalem Artichokes, Marinated Feta and Dill Oil Recipe

Ingredients:

  • 500g Jerusalem artichokes, scrubbed and sliced into rounds
  • 200g feta cheese, crumbled
  • 2 garlic cloves, minced
  • 1 tbsp chopped fresh dill
  • 1/4 cup olive oil
  • 1/4 cup white wine vinegar
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 220°C/425°F.
  2. In a large mixing bowl, toss the sliced Jerusalem artichokes with 2 tablespoons of olive oil and season with salt and pepper to taste.
  3. Arrange the sliced Jerusalem artichokes in a single layer on a baking sheet and bake for 20-25 minutes, or until crispy and golden brown.
  4. In another mixing bowl, combine the crumbled feta cheese, minced garlic, chopped fresh dill, white wine vinegar, and 2 tablespoons of olive oil. Mix well and set aside to marinate for at least 10 minutes.
  5. In a small mixing bowl, whisk together the remaining olive oil and dill to make the dill oil.
  6. Once the Jerusalem artichokes are ready, remove from the oven and transfer to a serving plate. Top with the marinated feta cheese and drizzle with the dill oil.
