Ingredients:

  • 1½ cups all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • ½ cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1 cup milk
  • 1 cup caramel chips
  • 1 cup crushed petit-beurre biscuits

Instructions:

  1. Preheat oven to 350°F.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, cream butter and sugar together until light and fluffy.
  4. Mix in eggs and vanilla extract.
  5. Gradually mix in flour mixture and milk into the large bowl, beginning and ending with flour mixture.
  6. Stir in caramel chips and crushed petit-beurre biscuits.
  7. Place cupcake liners in muffin tin.
  8. Fill each liner ¾ of the way full with the batter.
  9. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  10. Remove from oven and let cool completely on a wire rack.
