Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 1 egg yolk + 2 tbsp heavy cream
  • 2 cups fresh currants, rinsed and dried
  • 2 tbsp cornstarch
  • 1/4 cup honey
  • 1 tbsp lemon juice
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine flour, sugar, and salt. Add cubed butter and use a pastry cutter or your fingers to mix until the mixture has a sandy texture.
  2. In a small mixing bowl, whisk together egg yolk and heavy cream. Add to the flour mixture and use a fork to mix until a dough forms.
  3. Form the dough into a disc and wrap in plastic wrap. Chill in the refrigerator for at least an hour.
  4. Preheat the oven to 375°F. In a small mixing bowl, whisk cornstarch with 1 tbsp water until fully dissolved. Add honey, lemon juice, and a pinch of salt, and whisk until combined.
  5. Roll out the chilled dough on a floured surface to 1/4 inch thickness. Transfer to a 9-inch tart pan and trim the edges. Prick the bottom of the crust with a fork. Blind bake for 15 minutes.
  6. In a large mixing bowl, toss the currants with the honey mixture until fully coated. Pour the currants into the pre-baked crust and spread out in an even layer.
  7. Bake 30-35 minutes until the crust is golden brown and the filling is bubbly. Let the tart cool for at least 10 minutes before slicing and serving.
