Dashi Broth with Mushrooms Recipe
Ingredients
- 2 large dried kombu, wiped with a damp cloth
- 6 cups filtered water
- 1 cup dried shiitake mushrooms
- 1 cup fresh mushrooms (any kind you prefer)
- 1/4 cup tamari or soy sauce
- 2 tablespoons mirin
Instructions
- In a large pot, add kombu and water. Let it soak for 30 minutes.
- After 30 minutes, put the pot over the stove and bring to a boil.
- Reduce heat to low and let it simmer for 15-20 minutes.
- Remove kombu from the pot, set aside for other uses or discard.
- Meanwhile, in a separate pot, add dried and fresh mushrooms and cover with 4 cups of water. Bring to a boil and simmer for 10 minutes.
- After 10 minutes, pour the mushroom liquid into the larger pot with the dashi broth.
- Add tamari or soy sauce and mirin to the pot and stir well.
- Let the mixture cook over low heat for an additional 10-15 minutes.
- Turn off the heat and let it sit for a few minutes to cool down.
- Using a fine mesh sieve or cheesecloth, strain the broth into a clean pot or large bowl.
- Press the mushrooms and collect the broth in the bowl by squeezing them.
