Dashi Broth with Mushrooms Recipe

Ingredients

  • 2 large dried kombu, wiped with a damp cloth
  • 6 cups filtered water
  • 1 cup dried shiitake mushrooms
  • 1 cup fresh mushrooms (any kind you prefer)
  • 1/4 cup tamari or soy sauce
  • 2 tablespoons mirin

Instructions

  1. In a large pot, add kombu and water. Let it soak for 30 minutes.
  2. After 30 minutes, put the pot over the stove and bring to a boil.
  3. Reduce heat to low and let it simmer for 15-20 minutes.
  4. Remove kombu from the pot, set aside for other uses or discard.
  5. Meanwhile, in a separate pot, add dried and fresh mushrooms and cover with 4 cups of water. Bring to a boil and simmer for 10 minutes.
  6. After 10 minutes, pour the mushroom liquid into the larger pot with the dashi broth.
  7. Add tamari or soy sauce and mirin to the pot and stir well.
  8. Let the mixture cook over low heat for an additional 10-15 minutes.
  9. Turn off the heat and let it sit for a few minutes to cool down.
  10. Using a fine mesh sieve or cheesecloth, strain the broth into a clean pot or large bowl.
  11. Press the mushrooms and collect the broth in the bowl by squeezing them.
  12. The dashi broth with mushrooms is ready to be served.
