Delight of the Sun King – Delight Recipe

Ingredients:

  • 1 cup Basmati Rice
  • 1/2 cup Roasted Cashew Nuts
  • 1/2 cup Raisins
  • 1/2 cup peeled and chopped Carrots
  • 1/2 cup peeled and chopped Mangoes
  • 1 Tbsp Ghee
  • 1 Tsp Cumin Seeds
  • 1 Tsp Turmeric Powder
  • 1 Tsp Salt
  • 2 cups Water

Instructions:

  1. Take a deep non-stick pan and heat ghee on medium heat.
  2. Add cumin seeds and let them crackle.
  3. Add raisins and roasted cashew nuts and sauté until golden brown for about 1 minute.
  4. Add chopped carrots and sauté for another 2 minutes or until tender.
  5. Add turmeric powder and salt and mix well.
  6. Add Basmati rice and mix with the sautéed ingredients until rice is coated with spices.
  7. Add chopped mangoes and mix them well.
  8. Add water and stir well.
  9. Bring it to a boil, and then reduce the heat to low.
  10. Cover the pan with a tight-fitting lid and cook for about 20 minutes or until the rice is cooked and fluffy.
  11. Remove from the heat and let it sit covered for another 5-10 minutes.
  12. Open the lid and fluff the rice with a fork.
  13. Your Delight of the Sun King is ready to serve.
