Delight of the Sun King – Delight Recipe
Ingredients:
- 1 cup Basmati Rice
- 1/2 cup Roasted Cashew Nuts
- 1/2 cup Raisins
- 1/2 cup peeled and chopped Carrots
- 1/2 cup peeled and chopped Mangoes
- 1 Tbsp Ghee
- 1 Tsp Cumin Seeds
- 1 Tsp Turmeric Powder
- 1 Tsp Salt
- 2 cups Water
Instructions:
- Take a deep non-stick pan and heat ghee on medium heat.
- Add cumin seeds and let them crackle.
- Add raisins and roasted cashew nuts and sauté until golden brown for about 1 minute.
- Add chopped carrots and sauté for another 2 minutes or until tender.
- Add turmeric powder and salt and mix well.
- Add Basmati rice and mix with the sautéed ingredients until rice is coated with spices.
- Add chopped mangoes and mix them well.
- Add water and stir well.
- Bring it to a boil, and then reduce the heat to low.
- Cover the pan with a tight-fitting lid and cook for about 20 minutes or until the rice is cooked and fluffy.
- Remove from the heat and let it sit covered for another 5-10 minutes.
- Open the lid and fluff the rice with a fork.
- Your Delight of the Sun King is ready to serve.
