Ingredients:

  • 2 cups mixed dried fruit (raisins, currants, apricots, etc.)
  • 1 cup water
  • 1 cup sugar
  • 1/2 cup unsalted butter
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs, beaten
  • 1/4 cup milk
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a medium-sized saucepan, bring the mixed dried fruit and water to a boil. Reduce the heat and let simmer for 5 minutes.
  3. Add the sugar and butter to the saucepan and stir until melted and combined.
  4. Remove the saucepan from the heat and let it cool for at least 10 minutes.
  5. In a large mixing bowl, combine the flour, baking powder, and salt.
  6. Add the beaten eggs, milk, and vanilla extract to the dry ingredients and mix until well combined.

  8. Grease a 9-inch (23cm) square baking pan and pour the batter into the pan.
