Easter Nest Cake – Chocolate Recipe
Ingredients:
- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 1/2 cups shredded coconut
- 1/2 cup semisweet chocolate chips
- 1/2 cup butterscotch chips
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch cake pan with cooking spray.
- In a large bowl, combine flour, sugar, cocoa, baking powder, baking soda and salt. Add in milk, vegetable oil, eggs and vanilla and mix until combined.
- Stir in boiling water until smooth. Batter will be thin. Pour into prepared pan.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely on a wire rack.
- While cake is baking, toast coconut in a pan over medium heat until golden brown. Set aside.
- Melt semisweet chocolate and butterscotch chips in microwave or in a double boiler over low heat.
- Once cake has cooled, spread melted chocolate mixture over the top of the cake. Sprinkle toasted coconut on top.
- Using a fork, create a nest-like texture in the coconut and let the chocolate set.
- Decorate the nest with your choice of Easter candies, such as mini chocolate eggs or Peeps.
