Easter Nest Cake – Chocolate Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 1/2 cups shredded coconut
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup butterscotch chips

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch cake pan with cooking spray.
  2. In a large bowl, combine flour, sugar, cocoa, baking powder, baking soda and salt. Add in milk, vegetable oil, eggs and vanilla and mix until combined.
  3. Stir in boiling water until smooth. Batter will be thin. Pour into prepared pan.
  4. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely on a wire rack.
  5. While cake is baking, toast coconut in a pan over medium heat until golden brown. Set aside.
  6. Melt semisweet chocolate and butterscotch chips in microwave or in a double boiler over low heat.
  7. Once cake has cooled, spread melted chocolate mixture over the top of the cake. Sprinkle toasted coconut on top.
  8. Using a fork, create a nest-like texture in the coconut and let the chocolate set.
  9. Decorate the nest with your choice of Easter candies, such as mini chocolate eggs or Peeps.
