Easy Lemon Curd Recipe

Ingredients:

  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup sugar
  • 3 large eggs
  • 6 tablespoons unsalted butter, cut into small pieces

Instructions:

  1. Combine lemon juice, zest, sugar, and eggs in a heatproof bowl.
  2. Heat a pot with a few inches of water over medium heat. Place the bowl on top of the pot, making sure the bottom of the bowl doesn’t touch the water.
  3. Whisk the mixture constantly until it thickens and coats the back of a spoon, about 10 minutes.
  4. Remove from heat and whisk in the butter until it’s fully melted and incorporated into the curd.
  5. Strain through a fine-mesh sieve into a jar or container. Cover and refrigerate for at least 2 hours or overnight to thicken further.
