Easy Lemon Curd Recipe
Ingredients:
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 cup sugar
- 3 large eggs
- 6 tablespoons unsalted butter, cut into small pieces
Instructions:
- Combine lemon juice, zest, sugar, and eggs in a heatproof bowl.
- Heat a pot with a few inches of water over medium heat. Place the bowl on top of the pot, making sure the bottom of the bowl doesn’t touch the water.

- Strain through a fine-mesh sieve into a jar or container. Cover and refrigerate for at least 2 hours or overnight to thicken further.
