Egg and Tuna Sticks Recipe
Ingredients:
- 4 large eggs
- 1 can of tuna, drained
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- 1/4 cup breadcrumbs
- 2 tablespoons olive oil
Instructions:
- Boil the eggs until hard boiled, approximately 8-10 minutes. Once done, cool in ice water and peel the shells.
- In a medium-sized mixing bowl, combine the canned tuna, mayonnaise, Dijon mustard, lemon juice, salt and pepper. Mix well until combined.
- Using a sharp knife, slice the eggs in half lengthwise, scooping out the egg yolks and adding them to the tuna mixture. Mash the yolks with a fork and mix until combined.
- Spoon the tuna mixture into the egg whites, spreading evenly to fill each half.
- In another mixing bowl, combine the breadcrumbs with 2 tablespoons of olive oil.
- Dip each egg and tuna stick into the breadcrumb mixture, making sure the mixture sticks to the outside of the egg white and tuna filling.
- Place the egg and tuna sticks onto a baking sheet and bake in a preheated oven at 350°F for 15-20 minutes or until golden brown.
- Remove the egg and tuna sticks from the oven and serve hot with your preferred dipping sauce.
