Eggnog Mousse and Caramelized Apples
Ingredients:
- 1 cup heavy cream
- 1/4 cup granulated sugar
- 3 egg yolks
- 1/4 cup dark rum
- 1/2 tsp ground nutmeg
- 2 apples, sliced
- 2 tbsp unsalted butter
- 1/4 cup brown sugar
- 1 tsp ground cinnamon
Instructions:
For the Eggnog Mousse:
- In a medium saucepan, heat the heavy cream and granulated sugar over medium heat until the sugar dissolves, stirring frequently.
- In a separate bowl, beat the egg yolks until light and fluffy. Slowly add 1/4 cup of the hot cream mixture to the egg yolks, whisking constantly. Repeat with another 1/4 cup of the hot cream mixture.
- Pour the egg yolk mixture back into the remaining hot cream mixture in the saucepan and whisk until well combined.
- Continue to cook the mixture over medium heat, stirring constantly, until it thickens and coats the back of a spoon, about 6-8 minutes.
- Remove the saucepan from the heat and stir in the rum and nutmeg. Transfer the mixture to a large bowl and let it cool to room temperature.
- Once the mixture has cooled, beat it with an electric mixer until it becomes light and fluffy.
- Transfer the Eggnog Mousse to a piping bag with a large star tip and pipe it into individual serving glasses. Chill in the refrigerator for at least 30 minutes.
For the Caramelized Apples:
- Melt the butter in a large skillet over medium heat. Add the sliced apples and brown sugar and stir to combine.
- Sprinkle the cinnamon over the top of the apples and stir again.
- Cook the apples, stirring occasionally, until they are caramelized and tender, about 8-10 minutes.
- Remove the skillet from the heat and let the apples cool for a few minutes.
- Once the apples have cooled slightly, spoon them on top of the chilled Eggnog Mousse in the serving glasses.
