Eggplant Roulade with Feta Recipe

Ingredients:

  • 1 large eggplant
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil
  • 1/4 cup tomato sauce

Instructions:

  1. Preheat oven to 375°F.
  2. Cut the top and bottom from the eggplant. Slice the eggplant lengthwise into thin slices, about 1/4 inch thick.
