Eton Mess with Yogurt and Strawberries
Ingredients
- 2 cups of fresh strawberries
- 1/4 cup of granulated sugar
- 2 cups of Greek yogurt
- 1/2 cup of heavy cream
- 2 tablespoons of powdered sugar
- 4 meringue nests, crushed
- Mint leaves, for garnish (optional)
Directions
- Begin by washing and slicing the strawberries.
- Add the sliced strawberries and granulated sugar to a bowl and mix well. Let it sit for 10 minutes to macerate.
- In a separate bowl, whisk together the Greek yogurt and heavy cream until well combined.
- Add the powdered sugar and continue to whisk until soft peaks form.
- Next, fold in the crushed meringue nests into the yogurt mixture.
- Begin assembling the Eton mess by layering the yogurt mixture and macerated strawberries in a glass or bowl.
- Repeat until you reach the top of the glass or bowl.
- Garnish with mint leaves, if desired.
- Refrigerate for 10 minutes before serving.
