Festive Speculoos-Quince Tiramisu Recipe

Ingredients
- 1 package of speculoos cookies
- 1 cup of strong coffee, cooled
- 1/2 cup of granulated sugar
- 4 large eggs, separated
- 16 oz of mascarpone cheese

- 1 cup of quince compote
- Sprinkle of cinnamon
Instructions
- Crumble the speculoos cookies into small pieces and set aside.
- In a bowl, mix the cooled coffee with 1/4 cup of sugar.
- In a separate bowl, beat the egg yolks with the remaining 1/4 cup of sugar until light and fluffy. Add the mascarpone cheese and beat until smooth.
- In another bowl, whip the heavy cream until it forms stiff peaks. Fold the whipped cream into the mascarpone mixture.

Drizzle with a layer of the coffee mixture. Repeat layers, alternating between the mascarpone mixture, speculoos cookies, and coffee mixture, until all ingredients are used up.
- Top the final layer of the tiramisu with a layer of the quince compote and sprinkle with cinnamon.
- Refrigerate the tiramisu for at least four hours, or overnight, before serving.
