Festive Speculoos-Quince Tiramisu Recipe

This festive tiramisu combines the rich flavor of speculoos cookies with the tartness of quince compote to create a delicious and unique dessert perfect for any holiday gathering.

Ingredients

  • 1 package of speculoos cookies
  • 1 cup of strong coffee, cooled
  • 1/2 cup of granulated sugar
  • 4 large eggs, separated
  • 16 oz of mascarpone cheese
  • 1 cup of heavy cream
  • 1 tsp of vanilla extract
  • 1 cup of quince compote
  • Sprinkle of cinnamon

Instructions

  1. Crumble the speculoos cookies into small pieces and set aside.
  2. In a bowl, mix the cooled coffee with 1/4 cup of sugar.
  3. In a separate bowl, beat the egg yolks with the remaining 1/4 cup of sugar until light and fluffy. Add the mascarpone cheese and beat until smooth.
  4. In another bowl, whip the heavy cream until it forms stiff peaks. Fold the whipped cream into the mascarpone mixture.
  5. In a separate bowl, beat the egg whites until they form stiff peaks. Carefully fold them into the mascarpone mixture.
  6. To assemble the tiramisu, spoon a layer of the mascarpone mixture into the bottom of a rectangular dish. Sprinkle with a layer of the crumbled speculoos cookies. Drizzle with a layer of the coffee mixture. Repeat layers, alternating between the mascarpone mixture, speculoos cookies, and coffee mixture, until all ingredients are used up.
  7. Top the final layer of the tiramisu with a layer of the quince compote and sprinkle with cinnamon.
  8. Refrigerate the tiramisu for at least four hours, or overnight, before serving.
