Fig and Cocoa Truffles Recipe

Ingredients

  • 1 cup dried figs, stems removed
  • 1/2 cup almonds
  • 1/4 cup unsweetened cocoa powder

  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons unsweetened cocoa powder or desiccated coconut for coating

Instructions

  1. In a food processor, combine figs, almonds, cocoa powder, honey, coconut oil, vanilla extract, and salt.
  2. Pulse until the mixture forms a sticky dough, scraping down the sides as needed.
  3. Using your hands, form the dough into small balls (about 1 tablespoon each).
  4. Roll the truffles in the additional cocoa powder or desiccated coconut to coat.
  5. Store truffles in an airtight container in the fridge for up to 1 week or in the freezer for up to 1 month.
