Fig Tartlets Recipe

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1/4 cup cold water
  • 8 oz. fresh figs
  • 2 tablespoons honey
  • 3 oz. cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Directions:

  1. In a large bowl, mix together the flour, granulated sugar, and salt.
  2. Add the cold butter to the bowl and use a pastry cutter or your fingers to work the butter into the flour mixture until the mixture resembles coarse sand.
  3. Add the cold water to the bowl and mix it in until the dough comes together and forms a ball.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat the oven to 375°F. Roll out the dough on a floured surface to about 1/8 inch thickness.
  6. Using a cookie cutter or glass, cut the dough into circles and line a muffin tin with the circles.
  7. Prick the bottom of the tartlets with a fork and bake for 15-18 minutes or until golden brown.
  8. While the tartlets are baking, slice the fresh figs into thin pieces.
  9. In a small bowl, mix together the honey and cream cheese until smooth. Add the powdered sugar and vanilla extract and mix until well combined.
  10. Once the tartlets are done baking, let them cool for a few minutes. Spoon the cream cheese mixture into the tartlets and top with sliced figs.
