Financiers Recipe
Ingredients:
- 150g unsalted butter
- 150g ground almonds
- 150g icing sugar
- 60g plain flour
- 5 large egg whites, lightly beaten
Instructions:
- Preheat oven to 200C.
- Melt butter in a saucepan over medium heat, stirring occasionally until it starts to brown and smells nutty. Remove from heat and set aside to cool.
- In a large bowl, whisk together the ground almonds, icing sugar and flour.
- Add the beaten egg whites to the dry mixture and stir to combine.

- Fill financier molds (or muffin tins) with the batter, and bake for 10-12 minutes, or until golden brown on the edges.
- Let the financiers cool for a few minutes, then remove from molds and transfer to a wire rack to cool completely.
