Financiers Recipe

Ingredients:

  • 150g unsalted butter
  • 150g ground almonds
  • 150g icing sugar
  • 60g plain flour
  • 5 large egg whites, lightly beaten

Instructions:

  1. Preheat oven to 200C.
  2. Melt butter in a saucepan over medium heat, stirring occasionally until it starts to brown and smells nutty. Remove from heat and set aside to cool.
  3. In a large bowl, whisk together the ground almonds, icing sugar and flour.
  4. Add the beaten egg whites to the dry mixture and stir to combine.
  5. Pour the cooled browned butter into the mixture, and whisk until it forms a smooth batter.
  6. Fill financier molds (or muffin tins) with the batter, and bake for 10-12 minutes, or until golden brown on the edges.
  7. Let the financiers cool for a few minutes, then remove from molds and transfer to a wire rack to cool completely.
