Financiers with Blueberries
Ingredients
- 1/2 cup unsalted butter
- 1 cup almond flour
- 1/2 cup all-purpose flour
- 1 cup confectioner’s sugar
- 1/4 tsp salt
- 6 egg whites
- 1/2 tsp vanilla extract
- 1/2 cup fresh blueberries
Instructions
- Preheat the oven to 350°F.
- Melt the butter in a small saucepan over medium heat until fragrant and golden brown. Set aside to cool.
- Sift the almond flour, all-purpose flour, confectioner’s sugar, and salt into a large mixing bowl. Stir to combine.
- Add the egg whites and vanilla extract to the bowl and stir until smooth and well combined.
- Once the browned butter has cooled a bit, pour it into the mixing bowl and stir to combine.
- Line a muffin tin with muffin cups. Fill each cup about 3/4 of the way full with the batter.
- Poke 3 blueberries into the top of each muffin cup.
- Bake the financiers for 20-25 minutes or until the edges are golden brown and the centers are set.
- Remove from the oven and allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
