Financiers with Citron

Ingredients:

  • 120g unsalted butter
  • 60g ground almonds
  • 100g confectioners sugar
  • 50g all-purpose flour
  • 4 egg whites
  • 1 lemon zest

Instructions:

  1. Melt the butter in a small saucepan over medium heat until browned. Remove from heat and let cool.
  2. In a separate mixing bowl, combine the ground almonds, confectioners sugar, and all-purpose flour.
  3. Add in the egg whites one at a time, whisking until smooth.
  4. Next, add the browned butter and mix until well combined.
  5. Finally, add the lemon zest to the batter and stir until combined.
  6. Transfer the batter to a piping bag and pipe into a buttered financier mould or cupcake tray.
  7. Bake at 375°F (190°C) for approximately 15-20 minutes or until golden brown.

Serving Suggestions:

These financiers with citron can be served either warm or cold alongside a cup of coffee or tea. Sprinkle some confectioners sugar on top of the financiers to add some sweetness. These treats are perfect for dessert or as a sweet snack.
