Financiers with Citron
Ingredients:
- 120g unsalted butter
- 60g ground almonds
- 100g confectioners sugar
- 50g all-purpose flour
- 4 egg whites
- 1 lemon zest
Instructions:
- Melt the butter in a small saucepan over medium heat until browned. Remove from heat and let cool.
- In a separate mixing bowl, combine the ground almonds, confectioners sugar, and all-purpose flour.
- Add in the egg whites one at a time, whisking until smooth.
- Next, add the browned butter and mix until well combined.
- Finally, add the lemon zest to the batter and stir until combined.
- Transfer the batter to a piping bag and pipe into a buttered financier mould or cupcake tray.
- Bake at 375°F (190°C) for approximately 15-20 minutes or until golden brown.
Serving Suggestions:
These financiers with citron can be served either warm or cold alongside a cup of coffee or tea. Sprinkle some confectioners sugar on top of the financiers to add some sweetness. These treats are perfect for dessert or as a sweet snack.
