Fish ravioli


Fish Ravioli Recipe

Ingredients:

  • 1 lb. white fish
  • 1/2 cup ricotta cheese
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup bread crumbs
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1 egg
  • 1 tbsp. olive oil
  • 1 tbsp. lemon zest
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 package of pre-made pasta dough or homemade

Directions:

  1. Preheat the oven to 400°F(200°C).
  2. Cut the fish into chunks and place in a food processor. Pulse until finely ground but not puréed.
  3. In a large bowl, mix together the ground fish, ricotta cheese, Parmesan cheese, bread crumbs, parsley, basil, egg, olive oil, lemon zest, salt, and black pepper.
  4. On a floured surface, roll out the pasta dough and cut into 3-inch rounds using a cookie cutter.
  5. Place a spoonful of the fish mixture in the center of each pasta round. Fold the round in half and press the edges together to seal.
  6. Place the ravioli on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until the pasta is cooked and the filling is hot and bubbly.
  7. Remove from the oven and serve.

Serving Suggestions:
