Fish Ravioli Recipe
Ingredients:
- 1 lb. white fish
- 1/2 cup ricotta cheese
- 1/2 cup Parmesan cheese, grated
- 1/2 cup bread crumbs
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1 egg
- 1 tbsp. olive oil
- 1 tbsp. lemon zest
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 package of pre-made pasta dough or homemade
Directions:
- Preheat the oven to 400°F(200°C).
- Cut the fish into chunks and place in a food processor. Pulse until finely ground but not puréed.
- In a large bowl, mix together the ground fish, ricotta cheese, Parmesan cheese, bread crumbs, parsley, basil, egg, olive oil, lemon zest, salt, and black pepper.
- On a floured surface, roll out the pasta dough and cut into 3-inch rounds using a cookie cutter.
- Place a spoonful of the fish mixture in the center of each pasta round. Fold the round in half and press the edges together to seal.
- Place the ravioli on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until the pasta is cooked and the filling is hot and bubbly.
- Remove from the oven and serve.
