Fish-Stuffed Pepper Rolls Recipe

Ingredients

  • 4 large red or green bell peppers
  • 1 pound of firm white fish (tilapia, halibut, or cod), minced very finely
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked white rice
  • 2 tablespoons grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Start by preheating your oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers and remove the seeds and membranes.
  3. In a large pan, heat the olive oil over medium heat.
  4. Add the minced garlic and cook for a minute, stirring often.
  5. Add the minced fish, smoked paprika, cayenne pepper, salt, and black pepper and cook, stirring often until the fish is cooked through and has turned slightly golden brown in color for around 5-7 minutes.
  6. Remove the pan from heat and stir in the cooked white rice, grated Parmesan cheese, and chopped fresh parsley.
  7. Spoon the fish mixture into the hollowed-out bell peppers, filling each pepper about 2/3 of the way full. Roll each pepper tightly and place seam-side down into a baking dish.
  8. Bake the stuffed pepper rolls in the preheated oven for 25-30 minutes, or until the peppers are tender and the filling is heated through.
  9. Remove the pan from the oven and let it cool for a few minutes before serving.
