Flans of Steamed Cod with Green Curry, Khmer Style

Ingredients:

  • 1 lb. fresh cod fish, cut into small pieces
  • 1 cup coconut milk
  • 1 tbsp. green curry paste
  • 1 tsp. fish sauce
  • 1 tbsp. palm sugar
  • 1 cup chicken broth
  • 3 eggs
  • 1/4 cup heavy cream
  • 1/4 cup chopped fresh basil leaves
  • 1/4 cup chopped fresh cilantro leaves
  • Salt and pepper to taste

Instructions:

  1. In a large skillet, combine the coconut milk, green curry paste, fish sauce, palm sugar, and chicken broth. Bring to a simmer over medium heat.
  2. Add the cod fish pieces to the skillet and cook until the fish is cooked through, about 5-7 minutes.
  3. In a separate bowl, beat the eggs and heavy cream together until well combined. Season with salt and pepper to taste.
  4. Preheat the oven to 350F. Grease 6 ramekins with cooking spray.
  5. Place a spoonful of the cooked cod and sauce into each ramekin.
  6. Pour the egg mixture over the cod in each ramekin.
  7. Place the ramekins in a baking dish and pour hot water into the dish to come halfway up the sides of the ramekins.
  8. Bake for 20-25 minutes, or until the flans are set and golden brown on top.
  9. Remove from the oven and let the flans cool for a few minutes before serving.
  10. Sprinkle with fresh basil and cilantro leaves before serving.
