Flans of Steamed Cod with Green Curry, Khmer Style
Ingredients:
- 1 lb. fresh cod fish, cut into small pieces
- 1 cup coconut milk
- 1 tbsp. green curry paste
- 1 tsp. fish sauce
- 1 tbsp. palm sugar
- 1 cup chicken broth
- 3 eggs
- 1/4 cup heavy cream
- 1/4 cup chopped fresh basil leaves
- 1/4 cup chopped fresh cilantro leaves
- Salt and pepper to taste
Instructions:
- In a large skillet, combine the coconut milk, green curry paste, fish sauce, palm sugar, and chicken broth. Bring to a simmer over medium heat.
- Add the cod fish pieces to the skillet and cook until the fish is cooked through, about 5-7 minutes.
- In a separate bowl, beat the eggs and heavy cream together until well combined. Season with salt and pepper to taste.
- Preheat the oven to 350F. Grease 6 ramekins with cooking spray.
- Place a spoonful of the cooked cod and sauce into each ramekin.
- Pour the egg mixture over the cod in each ramekin.
- Place the ramekins in a baking dish and pour hot water into the dish to come halfway up the sides of the ramekins.
- Bake for 20-25 minutes, or until the flans are set and golden brown on top.
- Remove from the oven and let the flans cool for a few minutes before serving.
- Sprinkle with fresh basil and cilantro leaves before serving.
