Floating Island: Chef Recipe (3 Steps)

Ingredients:

  • 4 egg whites
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 egg yolks
  • 2 cups of milk
  • 1/3 cup of granulated sugar
  • 1 teaspoon of vanilla extract

Step 1: Making the Meringue

  1. In a bowl, beat the egg whites using an electric mixer on high until they form stiff peaks. This should take around 2 minutes.
  2. Gradually add the 1/3 cup of sugar while continuing to beat the egg whites until the mixture becomes glossy and forms stiff peaks.
  3. Add 1 teaspoon of vanilla extract to the mixture and beat again for around 30 seconds.
  4. Shape the meringue into small “islands” using spoons and place them on a baking sheet lined with parchment paper.
  5. Bake the meringue islands in a preheated oven at 350 degrees F for around 10 minutes, or until they turn golden brown.
  6. Remove the meringue islands from the oven and allow them to cool on the baking sheet.

Step 2: Making the Custard

  1. In a saucepan, combine the 2 cups of milk, 1/3 cup of sugar, and 1 teaspoon of vanilla extract. Heat the mixture over a medium flame, stirring constantly.
  2. Beat 4 egg yolks in a separate bowl.
  3. Once the milk mixture reaches a simmer, remove it from the heat and pour it into the bowl containing the egg yolks, whisking constantly to avoid cooking the eggs.
  4. Pour the mixture back into the saucepan and return it to the stove over low heat. Cook the mixture for around 2 minutes, or until it thickens and coats the back of a spoon.
  5. Remove the saucepan from the heat and pour the custard into a large bowl. Allow it to cool and form a skin on the surface.

Step 3: Assembling the Dish

  1. Place the cooled meringue islands on top of the cooled custard, using a slotted spoon to avoid breaking them apart.
  2. Serve the dish cold and enjoy!

Verdict:

Floating Island is a classic French dessert that is perfect for a fancy dinner party or a special occasion. The light and airy meringue islands pair perfectly with the rich and velvety custard. This recipe is a simple and elegant way to impress your guests.
