Floating Island: Chef Recipe (3 Steps)
Ingredients:
- 4 egg whites
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 egg yolks
- 2 cups of milk
- 1/3 cup of granulated sugar
- 1 teaspoon of vanilla extract
Step 1: Making the Meringue
- In a bowl, beat the egg whites using an electric mixer on high until they form stiff peaks. This should take around 2 minutes.
- Gradually add the 1/3 cup of sugar while continuing to beat the egg whites until the mixture becomes glossy and forms stiff peaks.
- Add 1 teaspoon of vanilla extract to the mixture and beat again for around 30 seconds.
- Shape the meringue into small “islands” using spoons and place them on a baking sheet lined with parchment paper.
- Bake the meringue islands in a preheated oven at 350 degrees F for around 10 minutes, or until they turn golden brown.
- Remove the meringue islands from the oven and allow them to cool on the baking sheet.
Step 2: Making the Custard
- In a saucepan, combine the 2 cups of milk, 1/3 cup of sugar, and 1 teaspoon of vanilla extract. Heat the mixture over a medium flame, stirring constantly.
- Beat 4 egg yolks in a separate bowl.
- Once the milk mixture reaches a simmer, remove it from the heat and pour it into the bowl containing the egg yolks, whisking constantly to avoid cooking the eggs.
- Pour the mixture back into the saucepan and return it to the stove over low heat. Cook the mixture for around 2 minutes, or until it thickens and coats the back of a spoon.
- Remove the saucepan from the heat and pour the custard into a large bowl. Allow it to cool and form a skin on the surface.
Step 3: Assembling the Dish
- Place the cooled meringue islands on top of the cooled custard, using a slotted spoon to avoid breaking them apart.
- Serve the dish cold and enjoy!
Verdict:
Floating Island is a classic French dessert that is perfect for a fancy dinner party or a special occasion. The light and airy meringue islands pair perfectly with the rich and velvety custard. This recipe is a simple and elegant way to impress your guests.
