Flower Tart with Cucumber, Cream Cheese, and Mint

Ingredients:

  • 1 sheet puff pastry
  • 1 medium cucumber, thinly sliced
  • 4 oz cream cheese, softened
  • 2 tbsp fresh mint, chopped
  • 1 egg, beaten
  • Salt and black pepper, to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Lightly flour your work surface and roll out the puff pastry into a rectangle, about 1/4 inch thick. Cut the pastry into equal-sized circles using a cookie cutter or a cup.
  3. Place the circles on a baking sheet lined with parchment paper.
  4. Using a fork, poke holes in each pastry circle, then brush them with the beaten egg.
  5. Bake the pastry circles in the preheated oven for 12-15 minutes, or until golden brown and puffy. Allow them to cool completely on a wire rack.
  6. In a medium mixing bowl, combine the cream cheese and chopped mint, and season with salt and black pepper. Mix well until smooth.
  7. Spread the cream cheese mixture over the cooled pastry circles.
  8. Layer the thinly sliced cucumber on top of the cream cheese mixture.
  9. Garnish with additional chopped mint, if desired.
