Focaccia with Cheese (Recco-style Cheese Focaccia)

Ingredients:

  • 500g flour
  • 10g salt
  • 50g olive oil
  • 1 package instant yeast (7g)
  • 250-300ml water
  • 200g Recco-style cheese or Stracchino cheese

Instructions:

  1. Mix the flour and salt in a large bowl.
  2. In a separate bowl, mix the olive oil, yeast and water.
  3. Add the liquid mixture to the flour mixture and mix until a dough forms.
  4. Knead the dough for 10-15 minutes, until it is smooth and elastic.
  5. Cover the dough with a cloth and let it rest for about an hour.
  6. Preheat the oven to 200°C.
  7. Roll the dough out on a floured surface, until it is about 5mm thick.
  8. Place the dough onto a greased baking tray.
  9. Spread the cheese over the dough, leaving a small gap around the edge.
  10. Place another layer of dough on top of the cheese.
  11. Press the edges together to seal the cheese inside.
  12. Bake in the preheated oven for about 15 minutes, or until golden brown.

Serving Suggestions:

This focaccia is great as a snack or served as an appetizer. It is best served warm, so if it has cooled down, place it in the oven for a few minutes to warm it up again.
