Focaccia with Cheese (Recco-style Cheese Focaccia)
Ingredients:
- 500g flour
- 10g salt
- 50g olive oil
- 1 package instant yeast (7g)
- 250-300ml water
- 200g Recco-style cheese or Stracchino cheese
Instructions:
- Mix the flour and salt in a large bowl.
- In a separate bowl, mix the olive oil, yeast and water.
- Add the liquid mixture to the flour mixture and mix until a dough forms.
- Knead the dough for 10-15 minutes, until it is smooth and elastic.
- Cover the dough with a cloth and let it rest for about an hour.
- Preheat the oven to 200°C.
- Roll the dough out on a floured surface, until it is about 5mm thick.
- Place the dough onto a greased baking tray.
- Spread the cheese over the dough, leaving a small gap around the edge.
- Place another layer of dough on top of the cheese.
- Press the edges together to seal the cheese inside.
- Bake in the preheated oven for about 15 minutes, or until golden brown.
