Fougasse with Olives and Chorizo Recipe

Ingredients:

  • 500g strong white bread flour
  • 1 tsp salt
  • 1 tbsp instant yeast
  • 2 tbsp extra-virgin olive oil
  • 300ml warm water
  • 1/2 cup black olives, chopped
  • 1/2 cup chorizo, sliced into small pieces

Instructions:

  1. In a large bowl, mix together the flour, salt, and yeast.
  2. Make a well in the center of the dry ingredients, add the olive oil and water, and mix until it comes together as a dough.
  3. Transfer the dough to a clean, lightly floured surface and knead for around 10 minutes until it becomes smooth and stretchy.
  4. Place the dough in a clean, lightly oiled bowl and cover with cling film. Leave to rise in a warm place for 1-2 hours until it has doubled in size.
  5. Preheat the oven to 220°C, Gas Mark 7.
  6. Knock back the dough and divide into two equal parts.
  7. Roll each part into an oval shape and use a sharp knife to create cuts in a leaf pattern.
  8. Fill the cuts with the chopped olives and chorizo.
  9. Bake in the oven for around 15-20 minutes until golden brown.
  10. Remove from the oven and serve hot or warm.

Serving Suggestions:

Fougasse with Olives and Chorizo is perfect for a snack or as an accompaniment to soup or salad. It can also be served as a starter. Enjoy it with a glass of red wine.
