Fougasse with Olives and Chorizo Recipe
Ingredients:
- 500g strong white bread flour
- 1 tsp salt
- 1 tbsp instant yeast
- 2 tbsp extra-virgin olive oil
- 300ml warm water
- 1/2 cup black olives, chopped
- 1/2 cup chorizo, sliced into small pieces
Instructions:
- In a large bowl, mix together the flour, salt, and yeast.
- Make a well in the center of the dry ingredients, add the olive oil and water, and mix until it comes together as a dough.
- Transfer the dough to a clean, lightly floured surface and knead for around 10 minutes until it becomes smooth and stretchy.
- Place the dough in a clean, lightly oiled bowl and cover with cling film. Leave to rise in a warm place for 1-2 hours until it has doubled in size.
- Preheat the oven to 220°C, Gas Mark 7.
- Knock back the dough and divide into two equal parts.
- Roll each part into an oval shape and use a sharp knife to create cuts in a leaf pattern.
- Fill the cuts with the chopped olives and chorizo.
- Bake in the oven for around 15-20 minutes until golden brown.
- Remove from the oven and serve hot or warm.

Fougasse with Olives and Chorizo is perfect for a snack or as an accompaniment to soup or salad. It can also be served as a starter. Enjoy it with a glass of red wine.
