Fougassettes from Grasse
Ingredients:
- 500g bread flour
- 10g salt
- 20g fresh yeast
- 150ml lukewarm water
- 150ml olive oil
- 100g finely grated parmesan cheese
- 100g finely grated pecorino romano cheese
- Black pepper
Instructions:
- In a bowl, mix flour and salt together.
- Dissolve yeast in water.
- Add flour mixture, olive oil, and water mixture together. Knead well for approximately 10 minutes and let the dough rise until it doubles its size.
- With your hands, create 10 small balls of dough and let them rest for 5 minutes.
- Preheat oven to 220°C and bake Fougassettes for 15-20 minutes or until golden brown. Let them cool down.
- When they are cold, use a serrated knife to make a small, rectangular opening and fan out the top part of the Fougassette. Generously sprinkle parmesan and pecorino cheeses over each Fougassette. Add a pinch of black pepper.
- Bake in the oven until cheese melts. Serve warm.
