Four Bean Salad Recipe

Ingredients:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) garbanzo beans, drained and rinsed
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 red onion, diced
  • 1 red bell pepper, diced
  • 1/4 cup chopped fresh cilantro
  • 1/3 cup apple cider vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • Salt and pepper to taste

Directions:

  1. In a large bowl, mix together all the beans, red onion, red bell pepper, and cilantro.
  2. In a separate bowl, whisk together apple cider vinegar, olive oil, honey, Dijon mustard, salt, and pepper.
