Ingredients:

  • 16 oz. pasta of your choice
  • 4 oz. speck, cut into small pieces
  • 4 oz. fontina cheese, grated
  • 4 oz. Gorgonzola cheese, crumbled
  • 4 oz. Parmesan cheese, grated
  • 4 oz. ricotta cheese
  • 1 cup heavy cream
  • 1 shallot, minced
  • 3 garlic cloves, minced
  • 4 tbsp. butter
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 1 tbsp. chopped parsley

Instructions:

  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions, until al dente. Once cooked, drain the pasta and keep warm.
  2. In a large skillet over medium-high heat, add the speck and cook until crispy, around 5-7 minutes. Remove speck from the skillet and set aside.
