FRESH EGG PASTA WITH BOAR RAGU RECIPE
Ingredients:
- 2 cups all-purpose flour
- 3 eggs
- 1 pound ground boar meat
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 cup tomato sauce
- 1/4 cup red wine
- 1/4 cup broth (chicken or beef)

Instructions:
- Start by making the pasta dough. On a clean surface, create a well in the center of the flour. Crack the eggs in the center of the flour and start mixing with a fork.
- Gradually start mixing in the flour from the edges until a crumbly mixture forms. Start kneading the dough until it becomes smooth and elastic (around 5 to 10 mins). Cover the dough with cling wrap and let it rest for at least 30 minutes.
- On a floured surface, roll out the pasta dough thinly and cut it into your desired pasta shape (fettuccine, linguine, or pappardelle).
- In a saucepan, heat the olive oil over medium heat. Add the onions and garlic, frying until they become translucent. Add the ground boar meat and cook until it turns brown (around 5 mins).
- Pour the red wine in the saucepan, stirring until the wine evaporates (around 2 mins). Add the tomato sauce, broth, and herbs to the saucepan.
- Lower the heat, cover the pan, and let the mixture simmer for around 15 mins or until the sauce thickens up. Add salt and pepper to taste.
- In a separate pot, cook the pasta in salted boiling water for around 2-3 minutes or until it floats at the top of the water.
- Drain the pasta and toss it with the boar ragu.
- Serve hot with freshly grated Parmesan cheese (optional).
