Fresh egg pasta with boar ragu


FRESH EGG PASTA WITH BOAR RAGU RECIPE

Ingredients:

  • 2 cups all-purpose flour
  • 3 eggs
  • 1 pound ground boar meat
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup tomato sauce
  • 1/4 cup red wine
  • 1/4 cup broth (chicken or beef)
  • 2 tablespoons olive oil
  • 1 sprig of thyme and rosemary
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese (optional)

Instructions:

  1. Start by making the pasta dough. On a clean surface, create a well in the center of the flour. Crack the eggs in the center of the flour and start mixing with a fork.
  2. Gradually start mixing in the flour from the edges until a crumbly mixture forms. Start kneading the dough until it becomes smooth and elastic (around 5 to 10 mins). Cover the dough with cling wrap and let it rest for at least 30 minutes.
  3. On a floured surface, roll out the pasta dough thinly and cut it into your desired pasta shape (fettuccine, linguine, or pappardelle).
  4. In a saucepan, heat the olive oil over medium heat. Add the onions and garlic, frying until they become translucent. Add the ground boar meat and cook until it turns brown (around 5 mins).
  5. Pour the red wine in the saucepan, stirring until the wine evaporates (around 2 mins). Add the tomato sauce, broth, and herbs to the saucepan.
  6. Lower the heat, cover the pan, and let the mixture simmer for around 15 mins or until the sauce thickens up. Add salt and pepper to taste.
  7. In a separate pot, cook the pasta in salted boiling water for around 2-3 minutes or until it floats at the top of the water.
  8. Drain the pasta and toss it with the boar ragu.
  9. Serve hot with freshly grated Parmesan cheese (optional).
