Fresh pink radish soup: easy recipe

Ingredients:

  • 2 cups of fresh pink radish, chopped
  • 2 tablespoons of butter
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Directions:

  1. Melt the butter in a pot over medium heat. Add the chopped onion and garlic, and cook for a few minutes until the onion is tender.
  2. Add the chopped radish, vegetable broth, salt and pepper. Bring to a boil, reduce heat and simmer for 15 minutes until the radish is cooked through.
  3. Remove from heat and let it cool for a few minutes. Puree the soup until smooth using an immersion blender or blender. Stir in the heavy cream.
