Fresh pink radish soup: easy recipe
Ingredients:
- 2 cups of fresh pink radish, chopped
- 2 tablespoons of butter
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
Directions:
- Melt the butter in a pot over medium heat. Add the chopped onion and garlic, and cook for a few minutes until the onion is tender.
- Add the chopped radish, vegetable broth, salt and pepper. Bring to a boil, reduce heat and simmer for 15 minutes until the radish is cooked through.
- Remove from heat and let it cool for a few minutes. Puree the soup until smooth using an immersion blender or blender. Stir in the heavy cream.
