Fruit Tartlets Recipe
Ingredients
- 1 cup all-purpose flour
- 1/3 cup butter, softened
- 1/4 cup granulated white sugar
- 1 egg yolk
- 2 tablespoons cold water
- 1/4 cup apricot jam
- 2 tablespoons water
- 1 cup mixed fresh fruit (strawberries, blueberries, kiwi, etc.), sliced
Directions
- In a large bowl, mix together flour, butter, sugar, egg yolk, and cold water until dough forms.
- Roll dough out onto a floured surface to desired thickness.
- Cut dough into circles, using a cookie cutter or glass. Press dough circles into a muffin pan.
- Bake at 375°F for about 12-15 minutes or until pastry is golden brown.
- Remove from oven and cool completely.
- In a small saucepan, heat apricot jam and water over low heat until melted.
- Brush the inside of the cooled tartlet shells with the melted apricot jam.
- Arrange sliced fruit on top of the apricot glaze.
- Drizzle any remaining apricot glaze over top of the fruit.
