Fruity Tabbouleh Recipe
Ingredients:
- 1 cup bulgur wheat
- 1 cup boiling water
- 1/2 cup fresh squeezed orange juice
- 1/4 cup fresh squeezed lemon juice
- 1/4 cup extra-virgin olive oil
- 1 teaspoon honey
- 1/2 teaspoon salt
- Ground pepper
- 2 cups diced mixed fruit (such as mango, strawberries, and grapes)
- 1/2 cup chopped fresh mint
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 1/4 cup thinly sliced scallions
Instructions:
- In a small bowl, cover bulgur with boiling water and let stand for 30 minutes.
- In a medium bowl, whisk together orange juice, lemon juice, olive oil, honey, salt, and pepper.
- Add mixed fruit, mint, parsley, cilantro, scallions, and the soaked bulgur (drained).
- Toss until all ingredients are well combined.
- Cover and refrigerate for at least 30 minutes or up to overnight before serving.
