Galette des rois: Pistachio Recipe
Ingredients
- 2 puff pastry sheets
- 1 1/4 cups of pistachios, shelled and coarsely ground
- 3/4 cup of sugar
- 1/2 cup of unsalted butter, softened
- 1 egg
- 1 teaspoon of almond extract
- 1 dried bean or figurine (for the traditional hiding inside the galette)
Instructions
- Preheat the oven to 375°F.
- In a medium bowl, mix the ground pistachios and sugar together.
- Add the softened butter, egg, and almond extract. Mix well until a smooth, creamy paste is formed.
- Roll out one puff pastry sheet into a round shape, about 12 inches in diameter.
- Transfer the pastry sheet onto a baking sheet lined with parchment paper.
- Spoon the pistachio cream onto the center of the pastry sheet, spreading it evenly and leaving about 1 inch of space around the edges.
- Place the dried bean or figurine somewhere in the pistachio cream, making sure it is well hidden.
- Moisten the edges of the pastry sheet with water, and then gently place the second sheet of puff pastry on top.
- Seal the edges of the two pastry sheets together, pinching them tightly to create a seal.
- With a sharp knife, score the top of the pastry in a decorative pattern, being careful not to cut all the way through to the filling.
- Brush the top of the pastry with a beaten egg yolk diluted with a little bit of water.
- Bake for 35-40 minutes, or until the pastry is golden brown and puffy.
- Let the galette cool for a few minutes before serving.
