Ingredients

  • 2 puff pastry sheets
  • 1 1/4 cups of pistachios, shelled and coarsely ground
  • 3/4 cup of sugar
  • 1/2 cup of unsalted butter, softened
  • 1 egg
  • 1 teaspoon of almond extract
  • 1 dried bean or figurine (for the traditional hiding inside the galette)

Instructions

  1. Preheat the oven to 375°F.
  2. In a medium bowl, mix the ground pistachios and sugar together.
  3. Add the softened butter, egg, and almond extract. Mix well until a smooth, creamy paste is formed.
  4. Roll out one puff pastry sheet into a round shape, about 12 inches in diameter.
  5. Transfer the pastry sheet onto a baking sheet lined with parchment paper.
  6. Spoon the pistachio cream onto the center of the pastry sheet, spreading it evenly and leaving about 1 inch of space around the edges.
  7. Place the dried bean or figurine somewhere in the pistachio cream, making sure it is well hidden.
  8. Moisten the edges of the pastry sheet with water, and then gently place the second sheet of puff pastry on top.
  9. Seal the edges of the two pastry sheets together, pinching them tightly to create a seal.
  10. With a sharp knife, score the top of the pastry in a decorative pattern, being careful not to cut all the way through to the filling.
  11. Brush the top of the pastry with a beaten egg yolk diluted with a little bit of water.
  12. Bake for 35-40 minutes, or until the pastry is golden brown and puffy.
  13. Let the galette cool for a few minutes before serving.
