Ganache with Spices, Mango Confit and Chocolate Whipped Cream
Ingredients:
- 1 cup heavy cream
- 12 ounces semisweet chocolate chips
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground nutmeg
- 1/2 cup mango puree
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
Instructions:
- For the ganache: In a medium saucepan, bring the heavy cream to a simmer over medium heat.
- Place the chocolate chips in a heat-proof bowl and pour the hot cream over them. Let the mixture sit for 5 minutes, then whisk until smooth.
- Add the cinnamon, cardamom, and nutmeg and whisk to combine. Allow ganache to cool to room temperature.
- Meanwhile, prepare the mango confit: In a saucepan, heat the mango puree, sugar, and salt over medium heat. Cook for 15-20 minutes or until the mixture has reduced by half
- For the chocolate whipped cream: In a large mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form.
- To assemble, spoon a layer of mango confit in the bottom of each serving glass. Add a layer of ganache on top of the mango confit, followed by a layer of chocolate whipped cream. Repeat layers as desired.
