Ganache with Spices, Mango Confit and Chocolate Whipped Cream

Ingredients:

  • 1 cup heavy cream
  • 12 ounces semisweet chocolate chips
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup mango puree
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions:

  1. For the ganache: In a medium saucepan, bring the heavy cream to a simmer over medium heat.
  2. Place the chocolate chips in a heat-proof bowl and pour the hot cream over them. Let the mixture sit for 5 minutes, then whisk until smooth.
  3. Add the cinnamon, cardamom, and nutmeg and whisk to combine. Allow ganache to cool to room temperature.
  4. Meanwhile, prepare the mango confit: In a saucepan, heat the mango puree, sugar, and salt over medium heat. Cook for 15-20 minutes or until the mixture has reduced by half
  5. For the chocolate whipped cream: In a large mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  6. To assemble, spoon a layer of mango confit in the bottom of each serving glass. Add a layer of ganache on top of the mango confit, followed by a layer of chocolate whipped cream. Repeat layers as desired.
