Gardianne-style Bull Tartare, Black Olives, and Citrus Fruits Recipe

Ingredients

  • 1 lb. of fresh bull meat, finely chopped
  • 4 cloves of garlic, finely chopped
  • 1 small red onion, finely chopped
  • 1/4 cup of black olives, pitted and chopped
  • 1/4 cup of fresh parsley, finely chopped
  • 1 tbsp of Dijon mustard
  • 1 tbsp of Worcestershire sauce
  • 1 tbsp of olive oil
  • 1 lemon, juiced
  • 1 orange, juiced
  • Salt and pepper to taste

Directions

  1. In a mixing bowl, combine the chopped bull meat, garlic, red onion, black olives, parsley, Dijon mustard, Worcestershire sauce, and olive oil. Mix until well combined.
  2. Squeeze in the juice from the lemon and orange, and season with salt and pepper.
