Gazpacho Recipe

Ingredients:

  • 3 large ripe tomatoes, chopped
  • 1 English cucumber, chopped
  • 1 red bell pepper, chopped
  • 1 small red onion, chopped
  • 2 cloves of garlic, minced
  • 3 cups of tomato juice
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/2 tsp paprika
  • 1 tsp salt

  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh cilantro

Instructions:

  1. In a blender, add the chopped tomatoes, cucumber, red bell pepper, red onion, and garlic. Puree until smooth.
  2. Transfer the pureed mixture into a large bowl.
  3. Add tomato juice, red wine vinegar, olive oil, paprika, salt, black pepper, and cumin. Mix well.
  4. Cover the bowl and refrigerate for at least 2 hours or overnight.
  5. Before serving, give the gazpacho a good stir.
  6. Garnish with chopped parsley and cilantro.
  7. Serve cold.
