Genepi Creme Brulee Recipe
Ingredients
- 1 cup heavy cream
- 1/2 cup whole milk
- 1/4 cup granulated sugar
- 3 egg yolks
- 1/4 cup genepi liqueur
- 1/4 cup raw cane sugar, for caramelizing
Instructions
- Preheat oven to 325°F.
- In a small saucepan, combine the heavy cream, whole milk, and granulated sugar. Cook over low heat until the sugar dissolves and the mixture is hot, but not boiling.
- In a mixing bowl, whisk the egg yolks until well beaten. Slowly pour the hot cream mixture into the egg yolks, whisking constantly.
- Add the genepi liqueur and whisk until fully incorporated.
- Pour the mixture into ramekins or custard cups and place them in a baking dish. Pour hot water into the baking dish, filling to about halfway up the sides of the ramekins.
- Bake for about 40 minutes or until the custard is set but still slightly jiggly in the center.
- Remove the ramekins from the oven and let cool to room temperature. Cover and refrigerate for at least 2 hours or overnight.
- Sprinkle raw cane sugar over the top of each custard and use a kitchen torch to caramelize the sugar until a golden brown crust forms.
