Genepi Creme Brulee Recipe

Ingredients

  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/4 cup granulated sugar
  • 3 egg yolks
  • 1/4 cup genepi liqueur
  • 1/4 cup raw cane sugar, for caramelizing

Instructions

  1. Preheat oven to 325°F.
  2. In a small saucepan, combine the heavy cream, whole milk, and granulated sugar. Cook over low heat until the sugar dissolves and the mixture is hot, but not boiling.
  3. In a mixing bowl, whisk the egg yolks until well beaten. Slowly pour the hot cream mixture into the egg yolks, whisking constantly.
  4. Add the genepi liqueur and whisk until fully incorporated.
  5. Pour the mixture into ramekins or custard cups and place them in a baking dish. Pour hot water into the baking dish, filling to about halfway up the sides of the ramekins.
  6. Bake for about 40 minutes or until the custard is set but still slightly jiggly in the center.
  7. Remove the ramekins from the oven and let cool to room temperature. Cover and refrigerate for at least 2 hours or overnight.
  8. Sprinkle raw cane sugar over the top of each custard and use a kitchen torch to caramelize the sugar until a golden brown crust forms.
  9. Serve immediately and enjoy your delicious Genepi Creme Brulee!
