Geranium Praline Mousse Recipe

Ingredients

  • 1 cup heavy cream
  • 1 cup milk
  • 1/2 cup chopped geranium leaves
  • 1/2 cup granulated sugar
  • 3 egg yolks
  • 3 tsp powdered gelatin
  • 1/4 cup water
  • 1/2 cup roasted hazelnuts, roughly chopped
  • 1/4 cup sugar

Instructions

1. In a medium sized saucepan, heat the heavy cream, milk, and geranium leaves over medium heat until bubbles form around the edges. Remove from heat and let steep for 20 minutes.

2. In a separate bowl, whisk together the sugar and egg yolks until pale yellow and fluffy.

3. Strain the geranium-infused cream into the egg mixture, whisking constantly.

4. In a small bowl, sprinkle the powdered gelatin over the water and let sit for 5 minutes until it becomes spongy.

5. Place the small bowl with the gelatin mixture into a larger bowl of hot water and stir until completely dissolved.

6. Pour the gelatin mixture into the geranium-infused cream and stir well.

7. Pour the mixture into individual serving cups or glasses and refrigerate for at least 2 hours, until the mousse is set.

8. To make the praline topping, spread the hazelnuts in a thin, even layer in a nonstick skillet over medium heat. Sprinkle the sugar over the top of the hazelnuts and cook until the sugar melts and turns a caramel color, stirring occasionally. Remove from heat and let the hazelnuts cool completely before roughly chopping.

9. Sprinkle the praline topping over the mousse and serve chilled.
