Gingerbread Cookies

Ingredients:

  • 3 cups all-purpose flour
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, room temperature
  • 3/4 cup brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract

Instructions:

  1. In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt.
  2. In a separate large bowl, using an electric mixer on medium speed, cream together the butter and brown sugar until light and fluffy. Add in the egg, molasses, and vanilla extract, and continue mixing until well combined.
  3. Gradually mix in the dry ingredients until the dough comes together and is smooth.
  4. Divide the dough in half, and wrap each half in plastic wrap. Chill in the refrigerator for at least 1 hour, or until firm.
  5. Preheat your oven to 350°F (175°C), and line a baking sheet with parchment paper.
  6. On a lightly floured surface, roll out one half of the dough to 1/4-inch thickness. Use cookie cutters to cut out desired shapes, and transfer them to the prepared baking sheet.
  7. Bake for 10-12 minutes, or until the edges are lightly golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes, before transferring the cookies to a wire rack to cool completely.
  8. Repeat with the remaining half of the dough, until all of the cookies are baked and cooled.
