Gingerbread Cookies Recipe

Ingredients

  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 3/4 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 6 tablespoons unsalted butter
  • 3/4 cup brown sugar (packed)
  • 1 large egg
  • 1/2 cup molasses

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves. Set aside.
  2. In a large bowl, beat the butter and brown sugar together until fluffy. Beat in the egg and molasses until smooth. Gradually mix in the dry ingredients until fully combined. The dough will be quite stiff.
  3. Divide the dough in half. Flatten each half into a disk, wrap in plastic wrap, and refrigerate for at least 2 hours (or up to 3 days).
  4. Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
  5. Remove one disk of dough from the fridge and let it sit at room temperature for 5-10 minutes. Roll it out on a lightly floured surface until it is about 1/4 inch thick. Use cookie cutters to cut out shapes. Re-roll the scraps and continue cutting out shapes until the dough is used up.
  6. Place the cut-out cookies on the prepared baking sheets, spacing them about 1 inch apart.
  7. Bake for 8-10 minutes or until the edges are lightly golden. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  8. Repeat the rolling and cutting process with the second disk of dough.
