Glazed Pavlova with Basil Strawberries
Ingredients:
- 6 egg whites
- 1 1/2 cups white sugar
- 2 tsp cornstarch
- 1 tsp white vinegar
- 1 tsp vanilla extract
- 1 pint strawberries, sliced
- 2 tbsp fresh basil, chopped
- 1/4 cup honey
Instructions:
- Preheat oven to 300°F (150°C).
- Beat egg whites with an electric mixer until stiff peaks form.
- Gradually add sugar, one tablespoon at a time, beating well after each addition until sugar is dissolved and mixture is thick and glossy.
- Sift cornstarch over mixture, add vinegar and vanilla extract and gently fold until just combined.
- Spoon mixture onto a baking tray lined with baking paper, creating a round shape.
- Use the back of a spoon to create a well in the centre, leaving a border around the edge (about 2cm).
- Bake for 1 hour or until pavlova is crisp on the outside, but not browned.
- Allow to cool on the tray.
- In a bowl, combine sliced strawberries, basil and honey, stirring well.
- Spoon mixture into the well on the pavlova.
- Serve immediately.
