Gluten Free Chocolate Muffins
Ingredients:
- 1 cup gluten-free flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 cup milk
- 1/2 cup unsweetened applesauce
- 1/4 cup oil
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
Instructions:
- Preheat oven to 375°F (190°C). Line a muffin tin with paper cups.
- In a large mixing bowl, whisk together the gluten-free flour, cocoa powder, sugar, salt, baking powder and baking soda.
- In a separate bowl, mix together milk, applesauce, oil, egg, and vanilla extract until blended.
- Pour the wet ingredients over the dry ingredients and stir just until blended.
- Add chocolate chips and stir in evenly.
- Spoon batter into muffin cups, filling each 3/4 full.
- Bake for 15-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Remove muffin tin from oven and let it cool for a few minutes. Then remove muffins from tin and place them on a wire rack to cool completely.
