Gluten Free Chocolate Muffins

Ingredients:

  • 1 cup gluten-free flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup milk
  • 1/2 cup unsweetened applesauce
  • 1/4 cup oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions:

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper cups.
  2. In a large mixing bowl, whisk together the gluten-free flour, cocoa powder, sugar, salt, baking powder and baking soda.
  3. In a separate bowl, mix together milk, applesauce, oil, egg, and vanilla extract until blended.
  4. Pour the wet ingredients over the dry ingredients and stir just until blended.
  5. Add chocolate chips and stir in evenly.
  6. Spoon batter into muffin cups, filling each 3/4 full.
  7. Bake for 15-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove muffin tin from oven and let it cool for a few minutes. Then remove muffins from tin and place them on a wire rack to cool completely.
