Gnocchi with Speck and Walnuts
Ingredients:
- 1 lb. gnocchi
- 4 oz. speck, sliced
- 1/2 cup walnuts, chopped
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp. butter
- Salt and pepper, to taste
Instructions:
- Bring a pot of salted water to a boil and cook gnocchi according to package directions. Drain and set aside.
- In a large skillet, melt butter over medium heat. Add speck and sauté for 2-3 minutes or until crispy. Remove from skillet and set aside.

- Add gnocchi to the skillet with the sauce, tossing to coat. Add salt and pepper to taste.
- Finally, add the speck and walnuts back into the skillet, gently stirring to combine and heat through.
- Serve immediately, garnished with additional Parmesan cheese and chopped parsley.
