Gnocchi with Speck and Walnuts

Ingredients:

  • 1 lb. gnocchi
  • 4 oz. speck, sliced
  • 1/2 cup walnuts, chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp. butter
  • Salt and pepper, to taste

Instructions:

  1. Bring a pot of salted water to a boil and cook gnocchi according to package directions. Drain and set aside.
  2. In a large skillet, melt butter over medium heat. Add speck and sauté for 2-3 minutes or until crispy. Remove from skillet and set aside.
  3. Add chopped walnuts to the same skillet used for the speck, and toast until lightly browned, about 2-3 minutes. Remove from skillet and set aside with the speck.
  4. In the same skillet, add heavy cream and Parmesan cheese, stirring until the cheese has melted and the sauce has thickened, about 3-4 minutes.
  5. Add gnocchi to the skillet with the sauce, tossing to coat. Add salt and pepper to taste.
  6. Finally, add the speck and walnuts back into the skillet, gently stirring to combine and heat through.
  7. Serve immediately, garnished with additional Parmesan cheese and chopped parsley.
