  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 4 seaweed sheets
  • 4 ounces softened goat cheese
  • 1/2 cup chopped cucumber

  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon black sesame seeds

Instructions:

  1. Mix the cooked sushi rice, rice vinegar, sugar, and salt to make sushi rice. Spread rice over a seaweed sheet, leaving a 1-inch border on one side. The border without rice will be the end of your roll.
  2. Spread the softened goat cheese over the rice. Top with chopped cucumber and scallions.
  3. Roll the sushi tightly using the border without rice to seal the roll. With a sharp knife, cut the sushi roll into 5 or 6 pieces.

  5. Chill the sushi rolls in the refrigerator for at least 30 minutes before serving.
