Goat Cheese Soufflé Recipe

Ingredients:

  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 1 1/4 cups hot milk
  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon cayenne pepper
  • pinch of nutmeg
  • 4 extra-large egg yolks, at room temperature
  • 3 ounces crumbled goat cheese
  • 5 extra-large egg whites, at room temperature
  • 1/8 teaspoon cream of tartar

Instructions:

  1. Preheat the oven to 400 degrees F.
  2. Melt the butter in a small saucepan over low heat.
  3. With a whisk, stir in the flour and cook for 2 minutes, stirring constantly.
  4. Slowly whisk in the hot milk and cook, whisking constantly, for about 2 minutes, until the mixture is thickened and smooth.
  5. Off the heat, add the salt, pepper, cayenne pepper, nutmeg, egg yolks, and goat cheese and stir until the cheese is melted.
  6. In the bowl of an electric mixer fitted with the whisk attachment, beat the egg whites and cream of tartar together on high speed until the egg whites form stiff peaks.
  7. Whisk 1/4 of the egg whites into the cheese sauce to lighten it and then fold in the rest. Pour the mixture into a 6 to 8-cup soufflé dish.
  8. Place the soufflé dish on a baking sheet and bake for 30 to 35 minutes, until puffed and brown.
