Ingredients

  • 500g potato gnocchi
  • 150g gorgonzola cheese, crumbled
  • 100g walnuts, roughly chopped
  • 2 garlic cloves, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil over high heat. Add the gnocchi and cook for 2-3 minutes, or until they rise to the surface. Reserve 1/2 cup of the cooking liquid, then drain the gnocchi and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the garlic and cook for 1 minute, or until fragrant. Add the chopped walnuts and cook for 2-3 minutes, or until lightly toasted.
  3. Stir in the heavy cream and gorgonzola cheese until the cheese is melted and the sauce is smooth. If the sauce is too thick, add some of the reserved cooking liquid to thin it out.

  5. Sprinkle with grated parmesan cheese and season with salt and pepper, to taste.
